Required Food Safety Course for ALF Food Service Managers

This course meets the training requirement (Florida Administrative Code (F.A.C. 58A-50191 and 64E11-012) which states that the Administrator (or person designated by the Administrator as responsible for the care community’s Food Service and the day-to-day supervision of Food Service staff) must successfully complete a yearly 2-hr food safety course.

This course has been pre-approved for Dietitians for 2 CEUs and CDMs can self-report and obtain 2 CEUs.

This course is presented in two parts:

Part One: Safe Before You Serve – One Hour
Safe Before You Serve teaches the many ways in which foodborne illnesses can be spread throughout a community and what you can do to prevent such outbreaks.

Part Two: Managing to be Safe – One Hour
Managing to be Safe teaches the requirements and documentation for employees to successfully keep people as safe as possible.

Training objectives:

  • Explain when to report an illness to the food service manager
  • Describe the policy for cleaning vomit and diarrheal incidents
  • List why elderly people are vulnerable to foodborne illness
  • Demonstrate proper hand washing techniques
  • List techniques to prevent food borne illness
  • Demonstrate the use of a thermometer
  • List requirements for training food service staff
  • List the documents necessary to retain on file for each employee
  • Explain the signs of communicable diseases
  • Describe when to send employees home (or when to tell them not come in to work), and when to make a report to the Department of Health
  • List the requirements for writing menus and keeping records of menus
  • List the requirements for emergency food supplies

This session, taught by a Registered Dietitian, will focus on information geared to those individuals engaged in food handling and serving — particularly at meal times. Infection control as well as food borne illness is reviewed. No limit on size of class and fee includes materials.

Two (2) Contact hours for ALF Administrators is provided (meets FAC 58A-5.020(1)(d) for annual training requirements)
Course fee of $250 is offered for unlimited participants from one facility; travel expenses are in addition to course fee.

Nutrition and Food Safety Course by Mail
Our Nutrition & Food Safety course is designed specifically for Assisted Living Facilities and meets the annual requirements of FAC 58A-5.020(1)(d) and 58A-5.0191(6) for staff training. Participants will learn the latest evidence-based research and clinical standards for long term care.
